Our second dish that we're cooking this Autumn Term at Q3 Langley Academy and this one is a pudding, a little sweet treat!
It's a fun, quick and simple dish to put together.
Be patient with your berry sauce, taste as you go along whilst adding the sugar as different fruits need different quantities of sugar to balance out their tartness.
If you want to make the pudding serve more, just double the recipe, you might want to use a bigger frying pan to comfortably fit those extra dumplings!
Warm Berries and Dumplings
300g frozen mixed berries
½ tbsp fresh lemon juice
4 tbsps plus 1 teaspoon caster sugar
½ cup plain flour (70g) (level)
½ tsp baking powder
¼ tsp baking soda
a pinch of salt
1 tbsp unsalted butter, melted
¼ cup buttermilk (55ml) (can use yoghurt with a splash of milk)
a pinch of ground cinnamon
In a medium frying pan, cook the berries, lemon juice, 2 tablespoons sugar, and 100ml of water over a medium to low heat until slightly thickened, 8-12 minutes.
Meanwhile, in a bowl, stir together the flour, baking powder, baking soda, salt and 2 tablespoons sugar; add melted butter and buttermilk, and stir until a moist dough forms.
Dividing evenly, spoon 4 small dollops of dough over the fruit in your frying pan.
Combine cinnamon and 1 teaspoon sugar, and sprinkle over dough.
Cover pan tightly with foil, and cook over medium-low until dumplings are set, springy and tops are dry to the touch, about 15 minutes.
Best served warm with cream or ice cream!
